Artichoke BitesA savory appetizer that may not be in your ‘go to’ file!

INGREDIENTS
12oz jar marinated artichoke hearts               1/2 tsp salt
1 onion finely chopped                                     1/4 tsp Italian seasoning
1 large garlic clove minced                               Tabasco to taste
4 eggs beaten                                                    Pinch Black Pepper
1/4 cup fine breadcrumbs                                 2 cups shredded cheddar

INSTRUCTIONS
Preheat oven to 325
DRAIN artichokes reserving 1/4cup of marinade
CHOP artichokes up (1/2″)
FRY up garlic and onion in reserved marinade til softened (5 min)
BEAT eggs in medium sized bowl
ADD onion/garlic mix, bread crumbs, S&P, Tabasco and pepper
STIR in cheese then artichokes
POUR into square greased 8″ glass baking dish
BAKE at 325 for 30-40min til not jiggly in the center
COOL 15min
Cut into squares, serve warm or cold
