Save me from boredom Mexican Marinade!

FullSizeRender

This is meat in a bag smothered in delicious fresh, zesty yumminess.
Sometimes our menus need something … and we have no idea what it is.
Inspiration can get crushed with too many recipe options.

The real beauty is that you probably have all the ingredients on hand!
Except cilantro.
You may not have cilantro…

In any case, here is some inspiration for your menu needs.

INGREDIENTS
1/3 cup cider vinegar
1/3 cup white vinegar
1/3 cup olive oil
1/3 cup fresh chopped cilantro
6 cloves garlic, minced
juice of 1 lime
1 tsp salt
2 tbsp. cumin
1 tbsp. peppercorns
1 tbsp. dried oregano

INSTRUCTIONS
MIX
everything together in a sealing zip lock bag.
ADD any meat – seriously, this is good for all meats!
MARINATE for 6 hrs (overnight) or more, you can’t wreck anything with this marinade.

Grill or bake or pan fry.

For those of you who were previous guests on Knot Anchored you will remember this on our get messy, eat with reckless abandon Sizzling Fajita lunch extravaganza.  Which unfortunately I have no pictures of to share  – sadness 😦
Anyways, I used the same marinade on both the chicken and beef fajita strips.

Great for the cottage, fancy shmancy dinner,  or whatever.
Tonight, on the rock we’re having it a la grilled pork tenderloin but the possibilities are endless!

Be prepared for applause 🙂
But not leftovers!
