Pesto Chicken & Broccoli Frittata

Look at how pretty this is!  Chicken, broccoli, sundried tomatoes all baked to perfection.  A great grab n’ go for anyone at anytime.
High in protein and low in calories I would put this frittata in a cage match with ANY granola bar.

Granted it would not hold up as well sitting in the bottom of my purse as an emergency snack but thats why we plan ahead and make meals like this – no emergencies!

Here’s your power house snack/breakfast/lunch:

INGREDIENTS
1 tbsp. oil
1 lb skinless, boneless chicken breast, cut into bite site pieces
3 cups finely chopped broccoli florets
8 large eggs
1/3 cup sour cream or Greek yogurt
1/4 cup of prepared pesto (I love Jamie Oliver’s)
1/4 tsp salt
1/4 tsp red pepper flakes
1/3 cup chopped sundried tomatoes (they are not overpowering in this)

INSTRUCTIONS
PREPARE
your muffin pan, a little Pam spray in each spot.
I just got this As Seen On TV muffin pan by Copper Chef because I am weak and cave in to all the end aisle Canadian Tire promotions.

With that said, the frittatas cooked evenly and popped out like a dream!

FRY the chicken breast up in a pan with some oil til cooked through. Remove and let cool.
FRY the broccoli up in a pan with some oil til cooked through. Remove and let cool.
PREHEAT oven to 375 F.
WHISK the eggs, yogurt, pesto salt and red pepper up.
STIR in the chicken, broccoli and sundried tomatoes.
FILL up your muffin cups evenly.
BAKE
20 minutes or until set.
COOL before popping them out.
