Cauliflower to me, has always been a pain in the butt.
You cut it up it and it leaves little pieces everywhere that can’t easily be wiped away and somehow get EVERYWHERE.
It’s bulky and has NO give. How many times have the battle lines been drawn between cauliflower and crisper – too many I say.
With that I give you Buffalo Style Cauliflower Bites!
We’ve made amends and I’m happy to say cauliflower and I are now fast friends.

INGREDIENTS
1 tbsp. olive oil
1 head cauliflower cut into bite site pieces
S &P
1 cup flour
3/4 cup milk
2 tsp garlic powder
1 lg tbsp scoop of butter
3/4 cup Frank’s Red Hot Sauce
Garnish for side dish version:
poppy seed dressing
green onions
INSTRUCTIONS
PREPARE your cookie sheet with parchment paper or spray Pam.
PREHEAT OVEN to 450
CUT cauliflower into bite size pieces ignoring the little bits that come off covering your knife, cutting board and body.
MIX the flour, S&P, and garlic powder in a large bowl.
ADD the cauliflower in and mix til pretty much covered, spread onto cookie sheet.
BAKE for 30 min.
(no need to flip but I do open the oven door a couple times to let the steam out so it’s more of a bake than a steam).
REMOVE from oven and flip over, baking for another 10-15 min.
This image is a half done pan flip at 30 min to show you the nice crispness that you’re looking for here.
Trust me, let them bake for the 30 min without flipping – heck you may want to even go more, you can’t wreck this…
ADD the butter and Frank’s to a small pan to melt together.
POP the pan out of the oven, spoon the Franks mix over top – no need to drown them just cover so they all get a kiss from Frank!
BAKE another 10 minutes and you’re done.
I serve them up with toothpicks and some poppy seed dressing as an appetizer.
You can prepare these ahead of time if you’re taking them somewhere and just refry them when you get there (it’s actually even better refried).
I’ve tried these out on unsuspecting friends as a side dish and an appetizer.
They went over well as a unique side dish idea and amazing, lick your fingers and suck your toothpick as an appetizer.
Don’t forget the green onions – they make it look nice 🙂
Buffalo Style Cauliflower doesn’t solve the previously mentioned battlefield that is your crisper and said cauliflower head (especially if you’re in tight quarters IE boat, trailer) BUT it does make it worth the effort no matter how you decide to serve it up.
As a bonus, you also need not feel bad about eating the whole pan while Netflixing cause it’s just CAULIFLOWER people!
